Several people in our household love bananas. Since they are one the least expensive fruits to buy, I almost always have them on hand. This recipe is simple to make, is delicious, and is a great way to use up some overripe bananas.

- 1/2 cup lard (home rendered, not Crisco) or unsalted butter
- 3/4 cup sugar (organic if possible)
- 3 very ripe bananas (medium/large)
- 2 large eggs (locally sourced if possible)
- 1 1/2 cups GF flour (I use Bob’s Red Mill 1 to 1 Baking Flour)
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup chocolate chips
- 1 tsp sugar for top (optional)
Preheat the oven to 350 degrees.
Cream together the butter/lard and sugar.

Add bananas and eggs and mix again.

Add flour. baking soda, salt, cinnamon and mix.

Mix in the chocolate chips.

Pour into a greased bread pan. The one I used is a 9″ x 5″. You can use another size, but you may have to adjust baking times accordingly. Sprinkle 1 tsp of sugar over the top at this point if desired. It gives a nice appearance and yummy crunch to the top.

Bake at 350 degrees for 55-60 minutes. I always check mine at 50 minutes to see how much longer it will need. Ovens bake differently, so adjust your times as needed. Once done, it will be set up and a toothpick will come out clean.
